No bake mini lemon tarts

  • BASE:

    1 cup dessicated coconut

    6 dates, seeds removed

    1 tbsp cashew butter

    TOP:

    ½ cup cashew butter

    ¼ cup coco oil

    1/8 cup coco cream

    1/8 cup honey

    Zest and juice of small lemon

    Pinch salt

  • Whiz all base ingredients and press into parchment lined muffin tins or silicon molds

    Whiz all top ingredients and spoon evenly between tarts. Top with thin slice of lemon

    Freeze overnight. Enjoy!
