Honey Marshmallows

    • 1 cup water, divided in half

    • 1/2 cup honey (the more local, the more benefits!)

    • 1/2 cup maple syrup

    • 4 tbsp unflavoured grass fed gelatin

    • 1 tsp vanilla extract 

    • 2-3 tbsp arrowroot, for dusting

  • Line a baking sheet with parchment paper and spread 1 tbsp arrowroot powder evenly over the paper.

    Add 1/2 cup water to a bowl and sprinkle gelatin evenly. Leave 10 min to bloom. 

    Add other 1/2 cup each water, honey and maple (you can just do all honey but I like the maple flavour too) to a saucepan and bring to the boil. Take care not to let it boil over as you stir for 15min

    Add hot mix to bloomed gelatin and stir to dissolve. Whisk hot mix now with vanilla for 8 min. We used a hand mixer and swapped every 2min! The mix eventually turns white and thickens then you’ve got to be ready to pour and spread with a spatula into your baking tray! It sets fast. Sprinkle with remaining arrowroot. 

    Note: (If your mix sets and you’ve not smoothed in time, cut into squares anyway and eat the wobbly bits then and there and voila, still perfect marshmallows!)

    Note 2: I'm experimenting with lower temp heating for the honey and adding honey later - to hold onto its wondrous nutritional magic... keep checking back for updates!)
