Ingredients
1kg boneless pork shoulder roast
2 tsp salt, more to taste
2 tsp ground cumin
1 tsp dried paprika
1 tsp crushed dried oregano leaves
1 medium orange
6 garlic cloves, peeled
1 large yellow onion, peeled and quartered 1 dried bay leaf
1 tbsp ghee or butter

Cut the pork into large chunks, dice the onions and add the herbs.
Take the rind off the orange with a peeler and place the rind in the pot with the other ingredients. Juice the orange and add it too.
Slow cook the pot in a slow cooker or in an oven at 160c for 2-3 hours.
Use lettuce cups to hold the pork mix with guacamole. For extra crunck you can cook sweet potato chips and add them to the cups too.
