Lemon curd tarts

  • Base:

    3 tbsp nut butter

    1 tbsp butter

    1 egg

    Pinch salt

    1-2 tbsp honey

    4 tbsp cassava or other gf flour

    Lemon curd:

    3 egg yolks

    3tbsp butter, ghee or coconut oil melted

    3 tbsp lemon juice

    1/2 tsp pure vanilla essence

    2 tbsp coconut sugar

  • Base:

    Preheat oven to 175° c. Mix all ingredients in a bowl then divide into even sized balls. Use a mini muffin and shape into tart cases. Bake 8-10 min until browning.

    Lemon curd:

    Mix all ingredients except egg yolks overlow heat then addegg and mix as it thickens. Put a tsp into each cooled tart case and refrigerate unil set
