Tim’s Fried Chicken

1cup arrowroot

2 eggs separated (yolks for mayo)

1 cup breadcrumbs (gf!) or whiz bukinis

Pinch salt

1/4tsp Thyme 

500g chicken either flattened with mallet or cut into bite sized strips

Butter/ghee/tallow for frying 

Dip each piece of chicken first in arrowroot then egg white the breadcrumbs then fry in choice of hard cooking fats until brown before flipping and cooking thru

Mayo

1-2 egg yolks

Olive oil - whisk as you add to prefer texture

Pinch salt

1/2 tsp Dijon

1/4 lemon squeezed
