Tom Kah Gai (coconut chicken sweet and spicy soup)
  1. In a saucepan, bring the stock, lemongrass, ginger, chilli, kaffir lime leaves and coconut sugar to a gentle simmer.
  2. Add the chicken, mushrooms and coconut milk, and without boiling, stir until chicken cooked (5-10min).
  3. Add lime juice and fish sauce. Add broccoli florets and zucchini
  4. Serve with mint and basil leaves.
