Instructions
  1. finely chop red onion and steep in juice and zest of a lemon. Set aside.
  2. Next chop florets of cauli and process to ‘rice’ texture. Set aside.
  3. Last add parsley, mint, chopped tomatoes (or baby toms), zucchini, olive oil and salt and pepper. Mix all together.
