  1. Preheat oven to 350f/180c
  2. Add beet and coconut milk to pan and bring to the boil. Turn off heat
  3. Mix egg yolks and coconut sugar in a bowl and add to warm beet coconut milk
  4. Pour into ramekins. Submerge in boiling water in deep baking dish for 45min
